A Chinese cleaver for fine slicing of boneless meat, fish and vegetables. The Leung Tim Carbon Mulberry Slicing Cleaver (桑刀) pairs a thin carbon steel blade with a wooden handle for controlled everyday preparation.

Description

  • Best for: slicing, dicing, julienne cuts, herbs and aromatics.
  • Use on boneless ingredients only. Do not use on bones or frozen food.
  • Care: hand wash, dry immediately and lightly oil the blade after use.

Is this the right cleaver for you?

Choose this slicing specialist when fine cuts matter more than chopping power. Its blade is thinner and lighter than a dual-purpose cleaver or bone chopper. Prefer a stainless blade for everyday slicing and light chopping? Compare the Stainless Dual-Purpose Cleaver.

Caring for carbon steel and wood

Carbon steel develops a patina and can rust if left damp. Hand wash and dry the blade and handle immediately; do not soak or put them in a dishwasher. Lightly oil the blade after use and oil the wooden handle occasionally. Read our knife and care guide.
