One everyday cleaver for slicing, chopping and light bone work. The Leung Tim Stainless Dual-Purpose Cleaver (文武刀), also known as Man Mo Dou, combines a stainless steel blade with a steel handle for daily kitchen preparation.

  • Best for: meat, fish, vegetables, chicken and duck preparation.
  • Bone use: light work such as poultry bones and small fish bones. For heavier bone chopping, ask us about a suitable specialist cleaver. Do not cut frozen food.
  • Care: rust-resistant stainless steel; hand wash and dry immediately.

  • No. 3 — lightest of these three: 189 mm blade, 290 mm total length, approximately 404 g.
  • No. 2 — middle size: 195 mm blade, 298 mm total length, approximately 462 g.
  • No. 1 — largest and heaviest: 208 mm blade, 311 mm total length, approximately 533 g.

Simple daily care

Hand wash and dry immediately after use. Avoid dishwashers. Stainless steel resists rust but still needs care; an occasional light coat of oil helps preserve the blade. Read our knife and care guide.
