Is it only for Peking duck?
No. It is traditionally used for Peking duck, and also suits roast meats, delicate boneless ingredients and thin lemon slices. The lemon-tea preparation shown here is part of its use in Hong Kong cafés.
Can it chop bones?
No. This is a specialist slicing cleaver. Do not use it on bones or frozen food. If you need an everyday cleaver for slicing and light chopping, use our cleaver finder to compare options.
How do I care for it after cutting lemons?
Hand wash and dry immediately after use. Do not leave lemon juice on the blade or put it in a dishwasher. Store it dry with the edge protected. Occasionally oil a wooden handle to preserve its condition; a light coat of food-safe oil can help protect the blade.
